On June 30th 2007 Taste Tobago Ltd in collaboration with Gourmet Ingredients and Specialty Foods Ltd and the picturesque Blue Haven Hotel in Bacolet Tobago hosted the first annual and successful culinary competition for students and amateurs called Consommé.

The main idea behind Consommé is to help develop and encourage individuals to showcase their culinary skills in a competitive environment.

We want to be able to create an opportunity for individuals to expand their creative culinary abilities. We are also trying to have young people excel in areas other than music, dance or sports. This prestigious event encompassed an eclectic mix of activities which featured

A group of individuals creating unique recipes
A food tasting competition
A Social gathering of epicure and music enthusiasts

Consommé is intended to be an ultra-inclusive event offering competitors and patrons, warmth, security and the most pleasurable experience in a culinary and music festival.

It was our intention to have competition divided into two main registration categories:

1. Students
2. Amateurs

The student categories were as follows:

  • The Most Unique Gourmet Recipe
  • The Most Unique Sea Food Recipe
  • The Most Unique Creole Recipe
  • The Most Unique Vegetarian Recipe

It was out intention to have the competition further divided into another three sub categories for the Amateur competitors

  • The Most Innovative recipe on three stones
  • The Most Original Crab and Dumpling recipe or lambie
  • The Most Original use of Passion fruit or tamarind

But in 2008 we have decided to execute this aspect of the event, as well as make it into a weekend festival of and food and music.

This year there were a total of four (4) talented students who competed at the event from Culinary Schools in Trinidad and Tobago. These students were eager to showcase their Culinary Skills and their information is as follows:-

First place winner-: Mr. Brian Charles attends Trinidad and Tobago Hospitality and Tourism Institute won a Scholarship. We have collaborated with the Blue Haven Hotel who on our behalf have sought to kindly sponsor a scholarship through the Austrian Consulate for a one year Culinary Internship at a leading institute.

Second place winner-: Ms. Dionne Quashie of Charlotville Tobago attends Tobago Hospitality and Tourism Institute. Dionne also won a hamper courtesy Angostura for the best use of Angostura sauces.

Third place winner and overall People’s Choice winner on that night was Mr. Ken Williams, Ken also won a hamper thanks to Angostura for best use of Angostura Aromatic bitters.

Fourth Place winner-: Ms. Lauren Gordon of John Donaldson Technical Institute
