On Saturday 14th November, the Trinidad & Tobago Group of Professional Associations held its 2010 installment of the Professional Culinary Classics under the distinguished patronage of his Excellency, Professor George Maxwell Richards. This year’s theme was … Champions towards a cause.

Well tonight it’s all about the food! So we decided to go from booth to booth looking and closely observing the various dishes, using our personal criteria to kind of judge. We looked for things like … What type of dish was made? How creative was the preparation style used? How was it presented overall? How original was the dish cooked? Last but not least … how did it taste? Like TJJ is one of the judges or what??!!!

Our first set of observations only allowed us to see and smell really … oh and to take a whole lot of pictures lol. It wasn’t until the official invitation was given that patrons were allowed to part take in “Dinner” (that included us too). Folks then lined up at the various booths of choice to get a portion of their favorite dishes. Now there is a catch … each patron was only allowed a choice of “3 Meats”, so you could not have tasted all that your heart desired. We personally thought that there were some tough decisions to make, especially given the large variety to choose from.

In the end however, all the participating booths looked like they were well patronized. It really goes to show that not only did all the dishes taste exceptionally well, but that everyone has a different taste and preference. For anyone that didn’t make it, all we can do is provide you with photos of the various dishes prepared. To truly experience the event, let alone taste the food … you had to be THERE!
