UKTV Food is ‘Britain’s only television channel dedicated to the love of food’. And this time they have managed to incorporate another culture with a love of food: that of the Caribbean. Celebrating the best of Caribbean cuisine with the help of two sous chefs with roots in the region, Hasan DeFour and Barrington Douglas, the 10 part series of Rhodes Across the Caribbean will be shown on weeknights starting Monday 6th April at 9pm.

Both apprentices were handpicked for their passion for food and Caribbean connections. Hasan DeFour was born in Trinidad, and grew up there before moving to London. Since finishing training and stints in restaurants, Hasan has been running own catering business, DeFour catering, for over a decade, providing Continental as well as Caribbean cuisine for some high profile events and personalities along the way.

Barrington has cooked for the royal family at Harewood House, and was recently crowned Yorkshire’s ‘Male Entrepreneur of the Year’ for his success running his Discovery Bay Caribbean restaurant in Huddersfield. “My parents are from the Caribbean, so it will also be great to go back to my roots and learn more about the food that is created there. I’ll definitely be bringing back the inspiration to my dishes in the restaurant.”

Gary Rhodes’ stepfather John is Jamaican, and they travel together to the island for the first time. In Antigua, Gary meets the prime minister, an avid cook who holds a buffet featuring the traditional local dishes. Together, Gary, Hasan and Barrington also visit and explore Trinidad & Tobago, Curacao, St Lucia, Barbados and Grenada. In each country, locals tell their stories and are guides for discovering the authentic, local dishes. Gary learns to cook the recipes using the locally grown ingredients and freshly caught fish.

The series culminates with Gary and his two apprentices catering for a major celebration banquet at Gary’s restaurant in Grenada, The Calabash by Gary Rhodes. They use knowledge and skills acquired on this trip of a lifetime, but can Gary rise to the challenge and master the necessary culinary skills in time?

If you fancy trying your hand too, or if you miss any of the shows, all the recipes, as well as some video clips from the series, will be available at uktvfood.co.uk.
